Toasted Sunflower Seed and Chick Pea Hummus Recipe

This is how a make a great tasting hummus with my pantry staples. While I cooked most of the ingredients in this recipe, I am sure they will be fine raw too.  The toasting makes everything more flavourful.

Ingredients
·        2 cans of chick peas (garbanzo beans) with the liquid reserved from one can
·        2 cloves of garlic, peeled & sliced
·        1 cup of raw sunflower seeds
·        2 tablespoons of olive oil
·        ¼ teaspoon of rice wine vinegar (optional)

You will also need a large frying pan and a high-speed blender (like a Vitamix or similar)

1.     Keep the liquid of one can of chick peas aside, but then rinse & drain the chick peas from both cans.

2.     Begin by warming 1 tablespoon of olive oil in a frying pan (the 2nd tablespoon will be used later) on your stovetop. I suggest medium high.  Now comes the tricky part, this is a method of taking the frying pan on and off the burner so that none of the ingredients burn.

3.     While on the burner add the garlic to the fry pan but as the one side begins to brown, take the frying pan off the burner and turn over the pieces (either with a silicone spatula or tongs). The hot oil will continue to cook the other side. Then stir so that the garlic is now flavoring the oil.

4.     Return the frying pan to the burner & ad the sunflower seeds, constantly stirring for about a minute and then take the frying pan off the burner but keep stirring until the seeds have stopped cooking.  Now your kitchen should smell delicious with the smell of toasted sesame seeds and garlic.

5.     Add the drained chick peas to the pan and return to the heat, but keep stirring the sesame/garlic mixture up from the bottom of the pan.  Do this for about 2 minutes.  This won’t toast the chick peas, but it will get rid of the raw flavour.  Again, remove from the heat and keep stirring until the pan is no longer cooking the items.

6.     Next carefully ladle the mixture into the blender, as the ingredients will be very warm.  Then pour the reserved liquid from the can of chick peas into the blender.

7.     Begin to mix on low and gradually increase the speed.  You may have to turn the blender off and tamper it a bit (or push down the ingredients with a spatula).  I do this with the blender off to be on the safe side.

8.     Once it is combined, add the remaining olive oil and rice wine vinegar.  Blend on high until desired consistency.

9.     Remove lid from blender and allow to cool for about 10 mins before putting it into containers for refrigerating or freezing.

RECIPE TIP
Did you know you can freeze hummus? It won’t have the same zing as your fresh batch, but it’s great to have it ready to go for your lunch.  When thawing frozen hummus, stir it really well as it will be a little watery on the top.

Want to know how to incorporate it into a healthy lunch? Check out my BENTO BOX idea post at https://stufftodowithyourkidsinkw.blogspot.com/2018/12/start-2019-with-healthy-lunches-thanks.html

Our World Is Weird! Weird But True by National Geographic Kids Turns 10 + Contest Info

We'll start with the Disclaimer – Yes, we did receive a complimentary product, but this just means we're able to offer tell you about the books and the contest!

I received this product for free from Moms Meet (momsmeet.com) to use and post my honest opinions.  Compensation for this post was provided and this page may contain affiliate links.

I Received A Weird Package

As you can see in the photos above, I received a package filled with weird stuff. The package had lots of National Geographic Kids items and has all the facts about the wonderfully weird world we live in.

Their WEIRD BUT TRUE books have been capturing the interest of kids for a decade and this year to celebrate 10 years they are introducing WEIRD BUT TRUE! CANADA

This book is filled with fun facts about Canada and all it’s weirdness.  One fact I had no idea about is on page 142 that states

James Bond was based in part on a real-life spy from Winnipeg, Manitoba named Sir William Stephenson

How cool is that?!?!?! The Canadian themed facts are sure to get your whole family reading and learning about our nation!  Want to read about other topics? There is even holiday themed book. Weird But True Christmas: 300 Festive Facts to Light Up the Holidays which would make a great gift! See a sample of the info at https://kids.nationalgeographic.com/videos?videoGuid=0000015f-e03e-d43e-a9df-e8fefe020000

There are lots of subjects in the Weird But True book series to encourage kids to read and learn all about the weird world around us.  The pages are bright and have clear simple text to encourage even the most reluctant readers to get all the weird facts.

This not only helps your family but a portion of all book purchases help support National Geographic’s projects including exploration, conservation, research and education. With the cost around $11 per book it makes it an affordable, fun and fulfilling purchase. Pick up one at Indigo, or your favourite book store.

Start 2019 with Healthy Lunches Thanks to the Stuck On You #BentoBox – Enter To Win

We'll start with the Disclaimer – Yes, we did receive a complimentary product, but this just means we're able to offer you a chance to win one too! Enter the contest at the end of this post!

The New Year is just around the corner and which makes it a great time to get into new routines.  Eating better is a great way stay healthy and the Stuck On You Bento Box makes it easy to do so!  See how easy it is to pack a lunch with this bright, colourful and personalized lunch box.

Bears in Tiaras OH MY!

One of the memorable lines in The Wizard of Oz is “Lions and Tigers and Bears OH MY” well when I noticed what looked to me to be a Bear in a Tiara, I had an OH MY moment myself and knew this was the choice for our Bento Box designs.  These bright and cheerful lunch boxes came with our names on them as well, so we think there is a perfect colour and design for every member of your family as well.  Head to https://www.stuckonyou.ca/bento-products and see all the selections available.

Easy to Prepare Recipe Ideas for Your Stuck On You Bento Box Plus It’s Easy To Clean Too

The Stuck On You Bento Box is a 3 piece construction.  The outer shell complete with personalization, and inner tray that easily removed for fast clean up and rubber seal to keep everything in place once it’s filled up with a delicious lunch. While it is made up of three pieces, the instructions warn not to remove the seal from the outer shell casing of the bento box. To see all the care instructions, click on the image below to enlarge it.

For my first bento box creation I made Chicken, Goat Cheese and Spinach Pinwheel Wraps with sides of fruit, veggies, seven grain pita crackers and hummus. While the box lables give you and idea of where things should go, because my wraps had grains, protein, dairy and vegetables all in one I mixed it up a bit.

Here’s how I made my Chicken, Goat Cheese and Spinach Pinwheel Wraps

1.       I chopped a fully cooked chicken breast (I only used about half of it in my recipe, so I had enough to make another for the next day).

2.       Then I crumbled half of small size package of Goat Cheese and used a fork to mix and mash it into the chopped chicken

3.       Next, I washed a handful of baby spinach

4.       I layered the spinach and chicken mixture onto a whole wheat wrap.  For a variation you could spread the hummus on the wrap first and then layer it up, but because I made this the night before I didn’t want the wrap to get soggy so instead, I packed the hummus in the circular compartment to dip my wraps and veggies into it.

5.       Finally, I folded/rolled up my wrap and cut it into 2-inch pieces so it fit nicely into the bento box.

I filled the other compartments with radishes, kohlrabi, carrots and blackberries, pita chips and as mentioned about the hummus was added to the circular compartment.  For other bento box inspiration check out the video below and the idea list.
